In the summer of 2018, my neighbor who seemed hail and hearty died of a sudden heart attack. He was in his fifties. Alarmed and realizing that I also felt fine and was older, I immediately went to the doctor. My blood work showed that I was diabetic type 2 and had poor cholesterol and high triglyceride numbers. In my quest to change the nightmare that comes from climbing diabetic, weight, and fat storage numbers, I changed my life. I gave up cheese, ate more vegetables, and practiced intermittent fasting. A year later and my bloodwork showed that my fat numbers were lower, I was now a normal weight, and was now prediabetic. But the numbers were still too high – not healthy. AND the lab showed elevated triggers for autoimmune problems of hasimoto’s thyroid disease, lupus and other indicators that my body was becoming my own worst enemy. Unless I wanted to face the debilitating health complications that my labs were foretelling, I ran into someone who recommended that I eat microgreen salads. Sounded wonderful – non gmo – organic – and nutrient dense. For a year I included about 4 ounces of microgreens as a salad base just about every day as part of a low fat whole food plant based diet. My blood work is now miraculous – gone are the autoimmune triggers, I’m lower on the prediabetic scale, my triglycerides fell to be in the 80s, even my positive fats like omega 3s that did not improve with fish oil supplementation but did with hemp protein added to my salads.
